I always leave parts of the message blank (either a simple word or a sound) and together we sound it out and fill it in. This is a great activity to do as we begin to learn how to write. You can also do this at home on a Saturday morning. Keep it simple and keep it fun. The students love being 'word detectives' and figuring out how to complete it!
